Saucy Pulled Chicken Tostadas

Traditional tostadas are made up of fried corn tortillas, topped with refried beans and beef and toppings. In this lighter version, flour tortillas are baked with spray oil to achieve a crispy base. Lighter in saturated fat and overall calories, this recipe is made with saucy pulled chicken.

Ingredients
  • 8 street-style flour tortillas (do not choose low-carb, these will not get crispy)

  • spray oil

  • 1 lb. chicken breast tenders

  • 3 tbsp olive oil, divided

  • 3 tbsp tomato paste

  • 2 tsp granulated sugar

  • juice from 1/2 lime

  • 2 garlic cloves, finely minced

  • 2 tsp garlic powder

  • 2 tsp onion powder

  • 1 tbsp cumin

  • 1 tbsp paprika

  • 14 tsp cayenne pepper, plus more to taste

  • salt and pepper to taste

  • 12 cup shredded cheese

  • 1 cup shredded iceberg lettuce

  • 1 diced avocado

  • 2 diced Roma tomatoes

  • 12 finely diced white onion

  • 14 cup finely chopped cilantro

  • sour cream

Instructions
  • Step 1

    Preheat oven to 400 degrees F.

  • Step 2

    Once the oven has preheated, prepare a lined sheet pan. Add flour tortillas and spray with spray oil on each side.

  • Step 3

    Allow tortillas to bake for ~10 minutes, flipping halfway through. Remove from oven once crispy. Be careful not to let them burn (individual ovens vary).

  • Step 4

    In a large mixing bowl, add dry spices, sugar, 1 Tbsp. olive oil, tomato paste, lime juice, minced garlic, and a splash of chicken broth. Mix until it forms a thin paste.

    Add more broth if needed. Add chicken, toss to coat.

  • Step 5

    Heat remaining 2 Tbsp. olive oil in a large skillet over medium high heat. Once hot, add chicken, reserving the extra marinade in the bowl, then sear for 3 minutes on each side until nice color has appeared, do not allow to burn.

  • Step 6

    Remove chicken into a shallow bowl. Don’t worry if the interior of the chicken is raw as this will continue cooking in a later step.

  • Step 7

    Reduce the heat to medium-low, add minced garlic and allow to sear until fragrant.

  • Step 8

    Increase temperature to medium and add remaining marinade from bowl, remaining chicken broth, granulated sugar and scrape in any marinade left in the bowl. Mix until well combined then bring to a simmer.

  • Step 9

    Meanwhile, shred chicken with forks, or chop.

  • Step 10

    Add shredded chicken into sauce, toss and simmer for 2 to 3 minutes until sauce nicely coats the chicken.

  • Step 11

    On the crispy tortilla, add shredded cheese, chicken, shredded lettuce, tomatoes, onion, avocado and cilantro. Add a dollop of sour cream if desired.
