A healthy fruit kabob recipe for your Independence Day party pleasure!

By the activity that’s taking place around my neighborhood and the volume of boats in the lake this morning, I can safely say that the upcoming Fourth of July holiday will be celebrated a few days early this year.
As we know the fourth of July this year falls smack dab in the middle of the week so people are stretching out their holiday. I think it’s still safe to assume that Independence Day itself will be a huge day of festivity, including fireworks, food and fun! I see there are a few firework displays scheduled for the weekend following the actual holiday, which means more celebrating, plus additional food and fun! That’s a whole lot of celebrating in my opinion, but I’m not complaining one bit! Well, okay, maybe just a tiny bit.
The fireworks and fun in surplus amounts are awesome, but I’m not so excited about the surplus amounts of food. I’m not worried about consuming too much, my motto ONE BITE TASTES THE SAME AS TWENTY works great for food temptations at all parties I attend. I just don’t enjoy preparing a dish to pass for the festivities because of the recent temperatures we’ve been having. With the thermometer reading over 90 degrees lately it’s been excessively warm in my kitchen. Subsequently, the thought of cooking any food item to take to a party is not a pleasant one.
So I had to get creative and come up with some recipe ideas that are healthy, simple, and cool to make. Fruit kabobs- perfect!
How simple are those? Just take a quick trip to the market or grocery store and pick up a few of your favorite fruits; Blueberries, strawberries, pineapple, cherries, grapes, honeydew melon, watermelon, cantaloupe, oranges, apples, pears, kiwi or bananas (P.S. To prevent sliced apples or bananas from turning brown, brush each side of the apple or banana slices lightly with freshly squeezed pineapple or lemon juice.)
Make sure to rinse fruit thoroughly, then cut the larger sized fruit of your choice into bite size pieces. I prefer about one inch cubes. Simply thread fruit alternately onto wooden skewers, filling the entire length of the skewer leaving ½ inch of space at the top and bottom. This will use approximately 10-12 pieces of fruit per skewer. Simply display them on a decorative platter, cover with plastic wrap and you’re done!
My favorite way to display the fruit is to stick the ends of all the fruit kabobs into a small melon, either a watermelon or honeydew melon. Just be sure that the melon is sat on the “flat side” since you don’t want it to roll away once the fruit kabobs are in place! Cover lightly with plastic wrap and store in the refrigerator until you’re ready to head off for the party. There’s one more simple and fun recipe with you that I recommend specifically for the fourth of July. The recipe calls for fresh strawberries, red seedless grapes, blueberries and sweet cherries. It also includes the fun “StarMallows” that are made into the shape of stars, just for Independence Day as far as I’m concerned!
