Healthier Buffalo Chicken Dip

Buffalo chicken dip is a fan favorite at any tailgate—creamy, spicy and difficult to stop eating. This lighter version, made with cottage cheese and lesscream cheese, keeps the flavor but dials back the heaviness. It also packs in more protein, making you feel satisfied with less. Serve with celery sticks, whole-grain crackers alongside the tortilla chips to mix in more wholesome dippers.

Ingredients
  • 12 cup cottage cheese

  • 12 block cream cheese

  • 2 cans chicken, drained

  • 112 cups cheddar cheese, shredded (pre-shredded cheese is more difficult to melt)

  • 12 cup hot sauce (choose heat dependent on preference)

  • 12 ranch dressing package

  • Green onions, chopped, for garnish

Instructions
  • Step 1

    In a blender or using an immersion blender, blend the cottage cheese to make it smooth.

  • Step 2

    Place all ingredients into the slow cooker and heat on high for about an hour, until everything is melted. Stir well.

  • Step 3

    Turn heat to low or warm while serving or serve in a bowl. Garnish with green onions.
