Skillet Chickpeas

This recipe is a great and versatile way to elevate chickpeas. Sauté canned chickpeas with olive oil and spicesgarlic then finish with a squeeze of lemon. They crisp up nicely in the pan and can be served over on top of a salad, hummus or a grain. To save more on this recipe, the oil can be swapped for canola, vegetable oil or whatever is in the pantry.

Ingredients
  • 2 Tbsp. olive oil

  • 1 can chickpeas, drained and rinsed

  • 1 tsp. garlic powder

  • 2 tsp. paprika

  • 1 tsp. onion powder

  • 12 tsp. sugar or honey

  • Optional - pinch red pepper flakes

  • Salt and pepper to taste

  • Lemon juice to taste

  • Optional – chopped or dried parsley for topping

Instructions
  • Step 1

    In a pan over medium heat, add oil. Once warm, add chickpeas, spices and the sweet element. Sauté, stirring frequently, until chickpeas crisp up and are softened, about 7-10 minutes.

  • Step 2

    Season with salt and pepper to taste, then squeeze lemon juice and top with parsley if desired.
