Roasted Sweet Potato with Feta and Herbs

Ingredients
4 sweet potatoes, sliced ½ inch thick
3 Tbsp. olive oil
1 tsp. chili powder
1 tsp. paprika
1 tsp. garlic powder
1 tsp. onion powder
1 tsp. honey or maple syrup
Pinch chili flakes
Coarse salt and pepper to taste
1⁄4 cup fresh chopped parsley
1⁄2 cup crumbled feta cheese
Lemon juice to taste
Instructions

Step 1
Preheat oven to 425°F.

Step 2
Add to large, lined sheet pan and add olive oil, spices, honey and salt and pepper to taste.

Step 3
Toss to coat all the sweet potatoes, then spread out in an even layer.
Step 4
Cook for 30-35 minutes, flipping every 10 minutes.

Step 5
Serve on a platter and top with parsley, crumbled feta. Finish with a squeeze of lemon juice.
