Mediterranean-inspired Pasta Salad

Mediterranean-style diets are consistently associated with reduced risks of heart disease and improved longevity. This pasta salad is packed with fiber-rich vegetables, healthy fats from olive oil and antioxidant-rich herbs.

Ingredients
  • 8 oz whole-grain or legume-based bowtie or fusilli pasta

  • 1 cup cherry tomatoes, halved

  • 1 cup English cucumber, diced

  • 13 cup Kalamata olives, sliced

  • 14 cup red onion, finely diced

  • 13 cup sundried tomatoes

  • 12 cup feta cheese, crumbled

  • 14 cup basil leaves, chopped

  • 14 cup extra virgin olive oil

  • 2 Tbsp. mayonnaise

  • Juice of 1 lemon

  • 2 tsp. dried oregano

  • Salt and pepper to taste

Instructions
  • Step 1

    Cook pasta according to package directions. Rinse under cold water and drain.

  • Step 2

    In a large bowl, combine cooked pasta with tomatoes, cucumber, olives, onion, sundried tomatoes, feta and basil.

  • Step 3

    In a separate small bowl, whisk together olive oil, mayonnaise, lemon juice, oregano, salt and pepper.

  • Step 4

    Toss dressing with pasta mixture. Chill before serving.
