Beet lemonade from Terra GR

Michigan weather is as indecisive as they come. After a great deal of Fall-like weather, 80-degree temperatures have finally resurfaced. Terra GR, rebranded from Trillium Haven restaurant, has put a unique, and delicious, spin on the traditional summer staple—lemonade. With fresh ingredients and just the right amount of sweet and tart, this Beet Lemonade is a bright and refreshing way to cool off.
Beet Lemonade
Yields: 4 drinks
Ingredients:
-12oz. lemon juice
-8oz. simple syrup
-14oz. beet juice
-Ice
-Water
-Lemon wheel, garnish
Beet Juice:
-½ lb. beets (roasted, peeled, and cut)
-1 cup white wine vinegar
-1 cup water
-½ cup sugar
-1 T pickling spice (put in cheese cloth or coffee filter)
Heat vinegar, water, sugar, and pickling spice. Pour over roasted beets and let chill.

Lemon Juice:
Combine equal parts fresh squeezed lemon juice (with the pulp) and water. Let chill.
Simple Syrup:
Combine equal parts hot water and sugar. Heat until sugar dissolves. Let chill.
Directions:
-Fill a glass (pint-sized) ½ full of ice. Add the lemon juice, simple syrup, and beet juice. Top with water and shake to incorporate. Garnish with a lemon wheel and serve.
