Beer steamed mussels from Founders Brewing Company

Renowned Founders Brewing Company in Grand Rapids has given us another take on a delicious mussels recipe using their delicious and popular craft beers. A simple, clean, yet flavorful recipe provided by Dave Engbers, Co-founder and Vice President of Brand and Education for Founders Brewing Company. Well known across the country for their beer and taproom atmosphere, Founders was the first place I fell head over heels in love for Michigan craft beer.
Years later, I have yet to be disappointed by the clever sandwich names, taproom experience, or the ever-delicious brew options. In my mind one of the best Pale Ale’s around, this recipe uses Founders Pale Ale as its base.
Beer Steamed Mussels
Serves: 4-5 people
Ingredients:
3 T melted butter (or olive oil)
3 cloves minced garlic
¼ onion, diced fine
2 ½ – 3 lbs. mussels (bearded and scrubbed)
12oz. Founders Pale Ale
1 bunch Italian parsley leaves, chopped
Salt to taste
Lemon wedges

Directions:
Rinse the mussels thoroughly and drain until dry. Heat a deep skillet (or a pot) on medium with the melted butter (or olive oil). Sauté the garlic and onions until you can smell the aroma, but before they are browned. Add mussels into the skillet and stir to combine. Pour in the Founders Pale Ale and cover skillet until the mussels are open and cooked. Stir in parsley and salt, to taste. Serve the mixture immediately with a squeeze of lemon or lime, if desired.
