Grapefruit and Thyme Refresher

This refreshing mocktail recipe is citrusy with light hints of woodsy and savory elements from the thyme. The grapefruit’s bitterness mocks the taste of alcohol, while its tartness is balanced with honey.

Serving Amount
Ingredients
  • 112 oz grapefruit juice

  • 1 oz fresh lime juice

  • 1 sprig thyme

  • 2 tsp honey, depending on sweet preference

  • sparkling water

  • Ice

  • sliced limes and grapefruit, for serving

Instructions
  • Step 1

    In a cocktail shaker, add grapefruit juice, lime juice, thyme and honey. Shake until honey is well incorporated before adding the ice, otherwise it may separate and stick at the bottom. Taste to see if more honey is needed according to taste preference.

  • Step 2

    Add ice and shake again.

  • Step 3

    Strain mixture into a serving glass. Top with cold sparkling water and a thyme sprig. Cheers!
